we decided to build a different coffee experience when staying at any hinter space. it’s about learning, and taking some time to make the best cup of coffee out there. we source our beans from dispatch, our favourite coffee roaster in montréal. our coffee equipment comes from fellow coffee & moccamaster.

pour-over 101 (if you are a visual learner, here’s a video we made)

prep your filter and dripper: place the filter in your fellow stagg [x] pour-over dripper and rinse it with hot water. this isn’t just for cleanliness—it also preps your carafe or cup for what’s coming.

grind your beans: grab fresh coffee beans and use the fellow grinder. the catch inside has markings for the right amount—one dot for a single cup, two for a pair. grind to a medium-coarse consistency.

bloom your coffee: add your ground coffee to the filter, then pour a little hot water over the grounds to wet them evenly. let it sit for 30 seconds—this is where your coffee starts to come alive, releasing its hidden aromas and flavors.

pour the water: slowly pour the rest of the water over the coffee. use the marked levels on the carafe as your guide—one circle for a solo cup, two for a duo. pour evenly to ensure a smooth and balanced extraction.

let it brew: give it time to drip through2:30 to 3:00 minutes is just enough for the perfect cup.

savor the moment: once done, discard the grounds and filter. what’s left isn’t just coffee—it’s a rich, flavorful experience, crafted by your own hands. pour, sip, and slow down.
